Thanksgiving Stuffing Recipe

For the past several years we have been making stuffing from a recipe created by Colleen Anderson (my sister-in-law Lisa’s mom). This recipe is super easy and very tasty. As a matter of fact, Andrea and I think it is the best we have ever had. Now, we should apologize to both of our moms for breaking tradition, but you have to admit this sounds much better than “whole wheat and cranberry blah, blah, blah,” and “water chestnut extravaganza.”

Dutch Oven Stuffing

Ingredients:
6 – Celery stalks, chopped
1 – Medium onion, diced
1 – # Butter
3 – Medium boxes of Stove Top Stuffing
2 1/2 – Loaves Grandma Sycamore’s White Bread
Thyme
Sage
Salt

Directions:
- Bring 4 cups of water, celery, onions, butter, thyme & sage & salt (to taste) to boil.
- Cube 2 1/2 loaves of white bread and place in a large bowl or dutch oven, or divide into two 9X13 pans.
- Divide the Stove Top stuffing evenly into cubed bread and mix.
- Pour the wet ingredients evenly over the bread and stuffing, and mix well.
- Add more thyme, sage, and salt to taste

Here is where we diverge from Colleen’s recipe…
- Place into a 14-inch dutch oven and cook over propane or with charcoal briquettes (28 briquettes: 2/3 on lid and 1/3 underneath) for 60 minutes.

Fourth Annual Wilson Family ATV Adventure

Unlike our normal yearly trip to the San Juan mountains of Western Colorado, for 2009 we decided to explore the ATV trails of Utah. After hours of deliberation and research we selected the Duck Creek area of the Dixie National forest in Southern Utah, East of Cedar City. We really didn’t know what to expect. We had driven through Duck Creek once several years ago, but neither Andrea or I could recall details.

Well, let’s just say that we made a great decision, and had a fabulous time. We rented a large cabin whose property touched the Dixie National forest. We arrived on a Sunday evening, unloaded, took everything into the cabin, and hit the trails for a quick exploration. What we discovered immediately is that this is a very picturesque area. Elevation is about 9,500 feet with 100-feet-plus Ponderosa Pines (that smell of vanilla), huge stands of Aspens, meandering creeks,  occasional hoodoos, and gently rolling meadows, our eyes were the recipients of a visual smorgasbord.

As always the kids really enjoyed riding our ATVs. Unlike our trips to Colorado, because we didn’t have to trailer our ATVs daily, we rode a lot more, and the kids got to drive a lot more. Below is one of the river crossing they really loved.

Dread Pirate Roberts?

Ellie started saying this cute little line and we couldn’t figure out what it was, and then all of a sudden we got it…”I am the Dread Pirate Roberts and I’ve come for your soul!” One of the best lines from one of the funniest movies ever made: “Princess Bride.” We still can’t recall when she saw the movie…hum.

Is it Ever too Young to ATV?

Jared and Nicole riding two of our ATVs. Jared loves to ride anything. My motorcycle, Riley’s ATV, anything powered. Nicole was a little more timid, but picked it up quickly. Of course there was plenty of room and TONS of supervision by Andrea and me. And don’t call CPS, they always wear helmets…except this time. :-)

48 Hours Post Surgery

I am starting to heal enough that my right eye looks like an “eye” again. My main concern right now is that it is still dilated and the pupil is non-responsive to light.

24 Hours Post Surgery

As many of you know, I had surgery performed on my right eye Wednesday…a Vitrectomy, which is essentially going into my eye and removing all the “guts.” My post-op visit this morning went well. My surgeon said that I am healing well and should be able to see again soon. Yeah! I am so tired of not seeing…I have gained a true appreciation for those who are visually impaired, and now have an idea of what some of their challenges can be.

BMX Results for Jared

Jared had a great night, but a couple of crashes. The second was in his last race. He was out in first place when he lost control and flew over the handlebars of his bike…he landed on his head and slid on his stomach about 10 feet. OUCH! I was still in the gates when it happened. At first he wasn’t moving and men started running to him. I took off too. By the time I got there he was moving and crying. The safety official told me he was out for a few moments.

Jared didn’t want to finish the race, I don’t blame him. I was still nervous and worried that he was injured. Luckily the only thing really hurt was his pride. He was pretty upset that he didn’t get to finish. The kid that won was beaten by Jared by a sizable distance in the semi’s.

As soon as we got home and I got his bike off the rack, Jared was off riding. The picture shows his trophy, which says “Main Event Qualifier,” and his scuffed-up chin (he was wearing a full-face motocycle helment, which demonstrates how hard he hit).

Way to go Jared. We’re proud of you!

RAD Canyon – Moto One

Jared just finished his first BMX moto and placed 3rd. He was bummed, but I was surprised he finished at all…He was way out in 1st and then crashed hard. Jared jumped up, got back on his bike and hustled to finish 3rd.
